Cooking with peanut butter is a great idea! I’ve always liked peanut butter but since moving to the States I’ve become even more addictive to it’s delicious creamy flavour! I love peanut butter straight from the jar as a snack or mixed in with my hot breakfast cereal in the morning but this was the first time I tried cooking with it. The results were delightfully delicious!
Ingredients
- Red onion
- Garlic
- Shrimp
- Yellow or orange pepper
- Spicy peanut butter (I’ve been using Peanut Butter & Co’s The Heat Is On but if you can’t find spicy peanut butter try adding chili powder and cayenne pepper to smooth peanut butter)
- Splash of almond milk
- Large fresh tomato
- Serve on salad and enjoy!
How to make it
- Fry up some garlic and red onion in a pot
- Add fresh shrimp
- Add a sliced up pepper
- Mix in a big spoonful of spicy peanut butter
- Add a couple of splashes of almond milk (unsweetened)
- Throw in a fresh, chopped up tomato
- Serve on salad and enjoy!
This dish also tastes great using tofu and chicken if you’re not a big fan of shrimp.
